This dish is spectacularly delicious in its simplicity. Unlike most gratins, this one contains no cheese. Made with coconut milk instead of heavy cream, this dish tastes only lightly of coconut, and is rich and fulfilling without the heaviness of a cheesy gratin. Naturally sweet and smokey, with a kick of heat at the end, it's beloved by all who try it. Served with sliced grilled steak for a full meal. Vegetarians request without steak and I'll make your gratin hearty sized at no additional charge. The jicama salad makes a great accompaniment.
“I ate an entire serving of the gratin for lunch yesterday. The spicy kick comes in at the end for a nice finish.”
All options: GF, SF, B (v, DF, P (no butter/steak upon request))
Tikil gomen (spiced potato, carrot and cabbage stew)
Misir wat (lentils)
Gomen wat (spinach and ginger)
Customers who eat paleo can request without lentils, or those who want meat and veggies can add grilled chicken by the pound to accompany the vegetables. These dishes are so simple, but the Ethiopian spice mixtures and other ingredients come together to make an absolutely delicious meal that defies the simplicity of its parts. Order Injera (Ethiopian flat bread made from teff, a highly nutritious grain) to scoop it up with, available as an add on, or eat it on its own for a grain free option. The injera is purchased from an authentic Ethiopian market, and brought to you with your Full Belly Fare delivery.
All options: GF, SF, V, DF
This delightful salad is a study in contrasts; the textures and flavors mesh seamlessly with sweet and savory, fresh and dried, absorbent and zingy. Not your typical rice salad! Served with wild salmon baked with a Dijon dill glaze for a full entree, or request without salmon if you prefer it as a side dish or lighter vegan meal, and I'll add chickpeas.
All options: GF, SF, DF

Order it topped with succulent grilled steak for a full meal, or order without steak and enjoy a lighter meal for one or a side salad for two to accompany the pot pie polenta! In Oakland, CA, there's was, until recently, an Italian deli that simply had the best sandwiches and deli salads ever. I'm not sure why nobody seems able to match it, but I've been going there for 25 years and it's truly unique. They made an artichoke frittata that's absolutely delectable, and is one thing they offered that I am able to replicate well! So, have a little taste of Genova deli frittata here in Oregon! You won't regret it! Dense with artichokes, lightly cheesy with Parmesan, delicious reheated or cold out of the fridge! This is excellent without cheese, as well, for those who are dairy free.

In this Full Belly Fare signature dish, black beans, rice, jalapeños and sweet corn partner with goat cheese, cream cheese* and white cheddar for this unusual, yes, but incredibly tasty enchilada! These default to vegetarian - optional chicken added upon request.
Layered between corn tortillas with green enchilada sauce of tomatillos, garlic, cilantro, lime, and roasted chiles, these enchiladas are oh so scrumptious! Served with an avocado for slicing and a side of sour cream with scallions.

This is my all time favorite Vietnamese inspired dish, so light and satisfying, with intertwined complex flavors. Vermicelli rice noodles with bountiful fresh basil, mint, and cilantro mingle with fresh cucumber, carrots, daikon, iceberg lettuce and scallions with your choice of warm lemongrass grilled chicken or tofu, in a sweet chili lime fish sauce. This is served with a side of crushed peanuts. Vegan (no fish sauce) and/or peanut free by special request in order comment field.
